St John’s wort, also known as Hypericum, grows in our vineyards, where we practise regenerative farming, heralding the arrival of summer.

Sharing is caring

  • Harvest and winemaking: Grapes are hand-selected and harvested into small crates holding less than 19 kg. Following 36 hours of must settling, fermentation takes place at a controlled temperature of 15°C in a 600-litre stainless-steel tank. Ancestral-method sparkling wine made through a single fermentation, without added yeast, sugar or filtration.
  • Grape variety and vintage: 100% Pansa Blanca, 2025 vintage.
  • Ageing: At least 9 months on the lees in bottle.
  • Production: 900 bottles.
  • Viticulture: Sustainable and regenerative, without toxic chemicals.
  • Soil type: Sauló (sandy-loam soil).
  • Alcohol content: 11% ABV.

A youthful sparkling wine with a gently fruity and lactic character, offering aromas of white fruit, citrus, apricot and peach. Surprisingly fresh on the palate, with fine, well-integrated bubbles and flavours of white fruit and citrus, alongside subtle fermentation notes.
